Everything is stored locally in your browser (IndexedDB, with an automatic fallback to localStorage on older browsers) — nothing is ever uploaded anywhere. The app keeps automatic snapshots every ~15 seconds so a mistake is never far from undo, and reminds you to export a full JSON backup if it's been 14+ days. Moving to a new computer is as simple as exporting that backup and importing it there.

Do I need Excel installed? — No, the app itself needs nothing. Excel/Numbers/Google Sheets is only needed to open the exported workbook.
Can I use it on my phone? — It's built for desktop/laptop use (the booking grid needs the screen space); a tablet or phone can view it but a computer is recommended.
Is my data backed up automatically? — Locally, yes (auto-snapshots). For safety across devices, export the JSON backup regularly.
